
Wine menu
Our wine menu is exclusively composed of European organic wines. As we are striving for sustainability, it was an evidence for us to simply look around us for the best and closest possible product. Luckily, Europe possesses many vineyards worldwide renown for the quality of grapes resulting in high quality wines.
Additionally, we selected only the best and looked only for organic wines as they guarantee a preserved nature and taste due to the use of less chemicals and sulphites.

Ungeheuer Forst Riesling GG 2019
Georg Mosbacher - Pfalz - Germany
The organic Riesling is a wine which does not only match the natural sweetness of the beetroot but also compliments it with the high acidity and high sugar level. Furthermore, this is a GG wine which stands for “großes gewächs” this is the highest classification for wine in Germany. There are certain regulations, such as a maximum of 50 hl/ha are allowed to be produced or that the grapes have to reach a certain level of sugar “spätlesen” (late harvest) quality

The Chardonnay has been a balance of fruitiness and acidity and a mineral touch that go well with the mild & creamy flavours of pea purée but also with the asparagus (Jamie, 2016)

Pinot Noir (Spätburgunder) 2019
Claus Preisinger - Burgenland - Austria
Pinot Noir is a light-coloured white wine which can be fruity, floral and herbal depending on the origin. The Austrian Pinot noir has a characteristic of mushrooms and cranberries. The high acidity and fruity note complement the roast notes and boletus (Amberg, 2017)

Frederiksdal sur lie
Frederiksdal vin - Lolland - Denmark
The Cherry wine is oaked in French barrels which gives the cherry wine complexity, the high acidity and cherry notes goes well with fruity desserts and chocolate. The cherry wine trend is not just emerging locally but also globally, looking at “Frederiksdal wine estate” started with 200 bottles annually grew to now over 40000 bottles a year (Holland, 2019)
